So, I acquire two heads of cabbage. I HATE cabbage :) Except in coleslaw and egg rolls. I decided to make egg rolls :) I didn't wanna fork over money to make 'em tho! So i searched and searched online for an easy recipe. They all required lots of skill :( So, I found a recipe that looked easy as far as ingredients went and then decide to be creative. Say hello to my little friend!!
Whatcha Need:
2 C all-purpose flour
1 egg
1 tsp salt
1/2 C ice water, divided.
cornstarch
Whatcha Do:
Sift your flour into a bowl. In separate little bowl, beat the egg with the salt. Add 1/4 C of the water. Mix the egg mixture with the flour. Slowly add however much you need of the remaining water to make a sticky dough. Turn dough over onto lightly flour surface and knead until dough is smooth and elastic-give or take 5 minutes. Put the dough back in the bowl, cover and let it rest for about 30 minutes. Then the fun begins!!! Divide the dough into 2 equal parts. Then divide each half into roughly 6 pieces. If you don't have a cool little friend like me, then you gots to roll them out super thin and cut into squares. If you're cool like me, then just run the dough through your little helper until it's thing, cut into squares. The size of the squares depends on how big you want your egg rolls. I'm doing smaller ones, so mine about 6". Dust them with the cornstarch so they don't' stick together. Now, if you don't wanna use 'em right now, just cover them with cling wrap and put in your fridge/freezer :)
