Oatmeal Apple Crisp

Thank you to my fabulous guinea pigs :) I've been kicking around a simple recipe for a simple fruit crisp. Luckily, I had some wonderful family over this summer who are very accepting of my need to bake :)

Whatcha need:
1 C brown sugar, packed
1 C Flour
1 C rolled/quick oats
1/2 C melted butter
6 C apples, peeled, cored and sliced. (i used about 5 apples)
1/2 C white sugar
2 1/2 tsp ground cinnamon
Whatcha do:
Preheat your oven to 350 degrees. Spray an 8*8 pan with cooking spray. In medium sized bowl, combine brown sugar, flour, oats, and butter. Mix until you have crumbly goodness. Press half of this mixture into the prepared pan. In ziploc bag or bowl combine apples, white sugar and cinnamon. Mix until apples are well coated and then pour into pan. Cover with remaining brown sugar mixture. Bake for 40-45 minutes.
This stuff is freakin' amazing served warm topped with vanilla ice cream! :)
